| 1 | small honeydew melon | 1 |
| 6 cups | cubed cooked chicken (8 chicken breasts) | 1.5 L |
| 2 cups | chopped celery | 500 mL |
| 2 cups | seedless green grapes, cut in half | 500 mL |
| 1 cup | slivered almonds, toasted | 250 mL |
| 1-1/4 cups | mayonnaise | 300 mL |
| 2 tbsp | lemon juice | 25 mL |
| 1-1/2 tsp | curry powder | 7 mL |
| salt and freshly ground pepper |
Cut melon in half and remove seeds. With melon baller, scoop out pulp. In large bowl, combine melon balls, chicken, celery, grapes and almonds.
In small bowl, mix together mayonnaise, lemon juice and curry powder; stir gently into salad. Season with salt and pepper to taste.
This delicious combination of fruits and chicken makes for an elegant lunch.
