| 2-1/2 cups | chicken broth | 375 mL |
Add 1 tbsp/15 mL vegetable oil to a wok on medium heat. Cook garlic and chopped onion until fragrant. Add chicken pieces and stir until chicken becomes golden brown. Add sliced onion and tomatoes, and stir until cooked. Add salt and pepper to taste. Set aside.
Rinse rice in cold water and drain. Add 1/2 tbsp/10 mL vegetable oil to a wok on medium heat. Sauté rice in oil and stir thoroughly. Transfer rice to a saucepan and pour in chicken broth. Cook, covered on a low heat until rice is tender (about 20 - 25 minutes)
Combine rice and chicken in a bowl. Serve hot.
