| 1-1/4 cups | sugar | 300 mL |
| 1 cup | water | 250 mL |
| peel of 2 lemons, cut in strips and bitter white part removed | ||
| 1 cup | fresh lemon juice | 250 mL |
| 4 cups | ice water | 1 L |
Gently boil sugar, 1 cup/250 mL water and lemon peel in a small saucepan 8 to 10 minutes until sugar is dissolved and mixture syrupy; remove lemon peel and cool to room temperature.
Pour syrup into a large pitcher, add lemon juice and ice water and stir well. Add plenty of ice cubes and stir well again. Serve in tall glasses.
