| 3 lb | chuck steak, cut into 1-in/2-cm cubes | 1,5 kg |

| 1/2 cup | butter | 1/4 lb |
| 1/4 cup | flour | 60 mL |
| 1-1/2 cups | beef consommé | 375 mL |
| 1-1/2 cups | beer | 375 mL |
| 3 tbsp | brown sugar | 45 mL |
| 1-1/2 tbsp | minced parsley | 25 mL |
| 2 | bay leaves | 2 |
| 1-1/2 tsp | thyme | 7 mL |
| salt and pepper to taste |
Brown a little at a time in a large Dutch oven chuck steak, onions and garlic in butter.
Add flour. Mix flour with other ingredients to coat them well.
Combine and pour over meat beef consommé and beer. Season with brown sugar, minced parsley, bay leaves, thyme, salt and pepper.
Cover and bake in 300°F/150°C oven until meat is tender, about 3 hours. Cool. Reheat on top of stove when ready to serve.
