Beef & Beer Stew

Ingredients

3 lb chuck steak, cut into 1-in/2-cm cubes 1,5 kg
3 onions, chopped 3
1 clove garlic, crushed 1
1/2 cup butter 1/4 lb
1/4 cup flour 60 mL
1-1/2 cups beef consommé 375 mL
1-1/2 cups beer 375 mL
3 tbsp brown sugar 45 mL
1-1/2 tbsp minced parsley 25 mL
2 bay leaves 2
1-1/2 tsp thyme 7 mL
  salt and pepper to taste  

Directions

Brown a little at a time in a large Dutch oven chuck steak, onions and garlic in butter.

Add flour. Mix flour with other ingredients to coat them well.

Combine and pour over meat beef consommé and beer. Season with brown sugar, minced parsley, bay leaves, thyme, salt and pepper.

Cover and bake in 300°F/150°C oven until meat is tender, about 3 hours. Cool. Reheat on top of stove when ready to serve.
