| 2 lb | ground beef | 1 kg |
| 1-1/2 cups | fine bread crumbs | 375 mL |
| 1 tsp | salt | 5 mL |
| pepper to taste | ||
| 1/4 cup | milk | 60 mL |
| 1/4 cup | applesauce | 60 mL |
| 2 | eggs, beaten | 2 |
| 1 tsp | minced onion | 5 mL |
| 1/4 tsp | nutmeg | 1 mL |
| 3 tbsp | butter | 45 mL |
| 2 cups | water or chicken stock | 500 mL |
Combine ingredients except butter, mix well and form into 48 small balls. Brown in butter, then add water or chicken stock to simmer. Cook, covered, for 15 minutes.
Serve over rice or noodles.
These meatballs freeze well.
