| 8 oz | ricotta cheese | 200 g |
| 2 tbsp | sugar | 30 mL |
| 1 tbsp | orange liqueur | 15 mL |
| 1 tbsp | heavy cream 35% | 15 mL |
| 1 tsp | grated orange rind | 5 mL |
| 1 oz | semi-sweet chocolate, chopped | 25 g |
| whipped cream, range slices and grated orange rind for garnish | ||
| Chocolate Topping | ||
| 1-1/2 tbsp | cold water | 25 mL |
| 2 oz | semi-seeet chocolate, chopped | 50 g |
| 2 | egg yolks | 2 |
| 3 tbsp | hot water | 45 mL |
| 2 tbsp | sugar | 30 mL |
Place cheese in bowl and with electric beater, beat until smooth and creamy. Add sugar, orange liqueur and cream, and beat until combined. Add orange rind and chocolate and stir.
Divide mixture into dessert dishes.
Pour Chocolate Topping over top and chill until set.
Garnish with whipped cream, orange slices and a little grated orange rind.
Chocolate Topping
In microwave-safe bowl, place 1-1/2 tbsp/25 mL water and chocolate. Microwave on Medium until melted. Stir until smooth.
In small bowl beat egg yolks until thick and pale in colour.
In microwafe-safe bowl, place hot water and sugar. Microwave on High for 30 seconds until sugar is dissolved. Stir and microwave on High for 2-3 minutes (heavy syrup).
Add this boiling syrup to egg mixture and beat until combined. Add chocolate, mixing well. Set aside.
