| 2 cups | all-purpose flour | 250 mL |
| 3/4 cup | granulated sugar | 175 mL |
| 1 tsp | baking powder | 5 mL |
| 1 tsp | baking soda | 5 mL |
| 1/2 tsp | salt | 2 mL |
| 1 | egg | 1 |
| 1/4 cup | vegetable oil | 60 mL |
| 1 tsp | vanilla | 5 mL |
| 1 cup | mashed banana | 250 mL |
| 1 cup | crushed pineapple, not drained | 250 mL |
| 1 cup | chopped dates | 250 mL |
| 1/2 cup | chopped nuts | 125 mL |
Preheat oven to 350°F/180°C.
In a large bowl, thoroughly stir together the flour, sugar, baking powder, baking soda and salt.
In a separate bowl, beat egg. Add oil, vanilla, banana and pineapple; mix well.
Add to dry ingredients, stirring until well moistened. Fold in dates and nuts.
Pour batter into greased pan (9 x 5 x 5-in/23 x 13 x 13-cm). Bake in preheated oven for 1 hour or until toothpick inserted in middle comes out clean. Cool 10 minutes in pan, remove from pan and cool completely on wire racks.
