| 1 bushel | small or large beets | 1 bushel |
| 12 cups | vinegar | 3 L |
| 12 cups | sugar | 3 L |
Boil beets until knife will pass through easily. Put into cold water and rub skins off.
Slice, dice, french fry, or whole, I like all ways for different meals.
Put into hot sterilized jars. Boil brine and pour over beets. Seal. Let set for 6 weeks.
A tasty picled beet that will go with everything.
Recipe easy to cut down: 1 cup to 1 cup.
Do little or do lots, they're very popular.
