Peach Chutney

Ingredients

3 lb peaches 1.5 kg
4 lb apples 2 kg
3 lb onions 1.5 kg
1 lb seeded raisins 0.5 kg
1/4 lb ginger 115 g
1 tsp salt 5 mL
2 cups vinegar 500 mL
a little cayenne or red pepper, cut up a little
2 lb white sugar 1 kg

Directions

Peel and stone the peaches. Peel and core the apples. Peel onions. Chop all fine.

Add seeded raisins and ginger, both cut fine.

Add salt, vinegar, cayenne or red pepper, and white sugar.

Boil 1 hour. Pour immediately into hot sterilized canning jars and seal.
