| 1/3 cup | olive oil | 75 mL |
| 1 | large onion, thinly sliced | 1 |
| 1 clove | garlic | 1 clove |
| 1 tbsp | finely chopped parsley | 15 mL |
| 1 tsp | salt | 5 mL |
| 1/2 tsp | black pepper | 2 mL |
| 1/8 tsp | powdered saffron | 0.5 mL |
| 2-1/2 lb | cut up chicken | 1 kg |
| 1/2 | lemon, cut in 4 wedges | 1/2 |
| 1/3 cup | green olives | 75 mL |
Heat oil in Dutch oven or electric frying pan. Stir in next six ingredients.
Add chicken pieces and turn to coat with onion mixture. Arrange lemon pieces over top.
Cover and simmer 1-1/2 to 2 hours or until very tender.
Add olives and serve with noodles.
