| 1 cup | sugar | 250 mL |
| 1/2 cup | cornstarch | 125 mL |
| 1 | vanilla pudding pkg (3-oz/85-g) | 1 |

| 1/2 tsp | lemon extract | 2 mL |

| 2 cups | sweetened whipped cream | 500 mL |

In a heavy saucepan, mix milk, sugar, cornstarch, pudding, eggs and salt.
Cook over medium heat until mixture comes to a full boil, stirring constantly with a wooden spoon. Cook for 1 minute. Sitr in lemon extract. Pour into a bowl to cool. Cover with waxed paper.
Beat 3 times during cooling process for 1 minute each time. When completely cool, beat again for 1 minute. Pour 1/2 cup/125 mL filling into each shell and spread evenly.
Place sliced bananas on top and cover with remaining filling.
Top each pie with sweetened whipped cream and garnish with coconut chips. Chill.
