| 4 cups | hot water | 1 L |
| 4 | beef bouillon cubes | 4 |
| 1 cup | peeled and sliced carrots | 250 mL |
| 1 cup | peeled and diced potatoes | 250 mL |
| 1/2 cup | chopped onion | 125 mL |
| 1/2 cup | thick and chunky mild salsa | 125 mL |
| 3/4 lb | ground beef | 340 g |
| 1/4 cup | seasoned bread crumbs | 60 mL |
| 1/4 cup | milk | 60 mL |
| finely chopped cilantro leaves, to taste |
Combine water, bouillon cubes, carrots, potatoes, onion, and salsa in large saucepan.
Cook, stirring occasionally over high heat until mixture comes to a boil.
Combine beef, bread crumbs & milk in medium bowl, roll into 1-inch/2-cm meatballs.
Drop meatballs into boiling mixture in saucepan; reduce heat to low, cook for 20-25 minutes, or until potatoes are tender.
Sprinkle with cilantro leaves before serving.
