| 1 1/2 lb | cod fillets, fresh or frozen | 700 g |
| 1/4 lb | fat salt pork | 100 g |
| 1/2 cup | finely chopped onion | 125 mL |
| 1/2 cup | diced celery | 125 mL |
| 1 | chicken bouillon cube | 1 |
| 2 cups | hot water | 500 mL |
| 2 cups | diced raw potatoes | 500 mL |
| 1 tsp | salt | 5 mL |
| 1/8 tsp | white pepper | 0.5 mL |
| 1/4 tsp | dried thyme | 1 mL |
| 2 cups | milk | 500 mL |
Cut each fillet into 3 or 4 pieces.
Dice salt pork into 1/2 in/1 cm cubes. Fry in large saucepan until crisp and brown. Remove and drain cubes on paper towels. Add onion and celery to drippings. Cook for 5 minutes, stirring frequently.
Dissolve bouillon cube in hot water. Stir into vegetables. Add fish, potatoes and seasonings. Cover; simmer 8 to 10 minutes, or until fish is milky white.
Add milk. Heat gently for a few minutes to blend flavors. Garnish with pork cubes if desired.
