| 2 tbsp | butter | 60 mL |
| 1 tbsp | chopped onion | 15 mL |
| 5 cups | mashed turnip | 1.25 L |
| 1 tsp | salt | 5 mL |
| 1 tbsp | sugar | 15 mL |
| 1/8 tsp | freshly ground pepper | 0.5 mL |

| 2 | egg yolks | 2 |
| 2 | egg whites | 2 |
Melt butter, add onion and fry until a delicate brown.
Add mashed turnip, salt, sugar, pepper, cayenne and mix well.
Add beaten egg yolks.
Fold in stiffly beaten egg whites.
Put in a greased casserole and bake in a hot oven at 400°F/200°C for 20 to 25 minutes.
