Fruit and Chicken Salad

Ingredients

1 small honeydew melon 1
6 cups cubed cooked chicken (8 chicken breasts) 1.5 L
2 cups chopped celery 500 mL
2 cups seedless green grapes, cut in half 500 mL
1 cup slivered almonds, toasted 250 mL
1-1/4 cups mayonnaise 300 mL
2 tbsp lemon juice 25 mL
1-1/2 tsp curry powder 7 mL
  salt and freshly ground pepper  

Directions

Cut melon in half and remove seeds. With melon baller, scoop out pulp. In large bowl, combine melon balls, chicken, celery, grapes and almonds.

In small bowl, mix together mayonnaise, lemon juice and curry powder; stir gently into salad. Season with salt and pepper to taste.

Chef's Note

This delicious combination of fruits and chicken makes for an elegant lunch.
