Red Cabbage and Apple Salad

Ingredients

1 cup pickled red cabbage, drained 250 mL
1 cup grated tart apples (like Granny Smith) 250 mL
1/2 cup grated raw carrots 125 mL
2 tbsp chopped walnuts 30 mL
1 tbsp mayonnaise 15 mL
1/2 tbsp horseradish sauce 7 mL
1 tsp chopped dill (optional) 5 mL
  salt, pepper - to taste (optional)  

Directions

Mix all ingredients without mashing the cabbage to keep it crunchy, chill before serving.

Chef's Note

Not your average cole slaw!

Regular cabbage instead of red, and mustard instead of horseradish sauce may be used, but the original ingredients work the best. Adjust the amount of mayonnaise if comes out too dry or too watery to your taste.
