Ingredients

1 lb fresh whole-milk Mozzarella (Bocconcini) 500 g
4 tbsp extra virgin olive oil 60 mL
3 tbsp vegetable oil 45 mL
2 tbsp minced sundried tomatoes 30 mL
1 tsp red pepper flakes 5 mL
1/2 tsp minced garlic 2 mL
2 tbsp minced fresh parsley, to garnish 30 mL

Directions

Slice and arrange Mozzarella on a shallow dish.

Mix thoroughly olive oil, vegetable oil, sundried tomatoes, red pepper flakes, minced garlic, and pour over Mozzarella slices. Let sit at room temperature 3 to 4 hours.

Garnish marinated Mozzarella with fresh parsley. Serve with fresh baguette slices and, for extra colour, sliced tomatoes.
