Ingredients
| 8 lbs | green tomatoes | 3.5 kg |
| 4 | large onions | 4 |
| 5 | green peppers | 5 |
| 4 | red peppers | 4 |
| 1 cup | pickling salt | 250 mL |
| 4 cups | vinegar | 1 L |
| 4 cups | sugar | 1 L |
| 1 tsp | cloves | 5 mL |
| 1 tsp | cinnamon | 5 mL |
| 1 tbsp | tumeric | 15 mL |
Directions
Slice tomatoes, peppers and onions. Cover with salt, stir well and let stand for at least 8 hours, or overnight.
Rinse. Drain well. Put vegetables in a large kettle. Add vinegar, sugar and spices. Bring mixture to a boil, then simmer, uncovered, for about 30 minutes, stirring frequently until slightly thickened. Pour into hot sterilized jars and seal.
