Ingredients

2 cups all-purpose flour 250 mL
3/4 cup granulated sugar 175 mL
1 tsp baking powder 5 mL
1 tsp baking soda 5 mL
1/2 tsp salt 2 mL
1 egg 1
1/4 cup vegetable oil 60 mL
1 tsp vanilla 5 mL
1 cup mashed banana 250 mL
1 cup crushed pineapple, not drained 250 mL
1 cup chopped dates 250 mL
1/2 cup chopped nuts 125 mL

Directions

Preheat oven to 350°F/180°C.

In a large bowl, thoroughly stir together the flour, sugar, baking powder, baking soda and salt.

In a separate bowl, beat egg. Add oil, vanilla, banana and pineapple; mix well.

Add to dry ingredients, stirring until well moistened. Fold in dates and nuts.

Pour batter into greased pan (9 x 5 x 5-in/23 x 13 x 13-cm). Bake in preheated oven for 1 hour or until toothpick inserted in middle comes out clean. Cool 10 minutes in pan, remove from pan and cool completely on wire racks.
