Ingredients
| 2 | whole chicken breasts, skinned and boned | 2 |
| Marinade | ||
| 1/4 cup | soy sauce | 60 mL |
| 1/4 cup | orange juice | 60 mL |
| 2 tbsp | oil | 30 mL |
| 1/2 tsp | dried, crushed red peppers | 2 mL |
| 1 | clove garlic, minced | 1 |
| 1/4 cup | peanut butter | 60 mL |
| 2 tbsp | onion, finely chopped | 30 mL |
| 1 tsp | ground coriander | 5 mL |
| 1 tsp | ground tumeric | 5 mL |
| 1/2 tsp | ground ginger | 2 mL |
Directions
Cut chicken into 1-in/2-cm pieces.
Combine marinade ingredients and mix well.
Add chicken pieces and marinate 4 hours.
Place chicken on skewers and grill until chicken is done, about 10 minutes. Turn 2 or 3 times.
Serve over a bed of rice, with vegetables.
