Ingredients
| 4 | fresh salmon steaks, cut 1-in/2-cm thick | 4 |
| 1/4 cup | olive oil | 60 mL |
| 1/4 cup | red wine vinegar | 60 mL |
| 1 tbsp | balsamic vinegar | 15 mL |
| dash pepper | ||
| 1 | large red onion, thinly sliced and separated into rings | 1 |
| 1 tbsp | olive oil | 15 mL |
| dash salt | ||
| dash pepper | ||
| 1/2 tsp | dried rosemary | 3 mL |
| 1/2 tsp | dried thyme | 3 mL |
Directions
Combine olive oil, red wine vinegar, balsamic vinegar, and dash pepper.
Place onion slices in a plastic bag set into a shallow dish. Pour marinade over onion slices. Close bag. Marinate overnight, turning bag occasionally to distribute marinade.
Brush salmon steaks with the 1 tbsp/15-mL oil; sprinkle with salt and dash pepper.
Combine dried rosemary and thyme and rub 1/4 tsp/1-mL into each steak on both sides. Cover and refrigerate salmon till ready to grill.
Lightly grease cooking grill. Place fish on the cooking grill. Grill 10 to 12 minutes or till fish flakes when tested with a fork, turning once halfway through grilling time.
Remove onions from marinade with a slotted spoon; serve with salmon.
