Ingredients
| 2 jars | marinated artichoke hearts (6 oz/170 g) | 2 |
| 1 | small onion, finely chopped | 1 |
| 1 clove | garlic, minced | 1 clove |
| 4 | eggs, beaten | 4 |
| 1/4 cup | fine dry bread crumbs | 60 mL |
| 1/4 tsp | salt | 1 mL |
| 1/8 tsp | each, pepper, oregano and tabasco | 0.5 mL |
| 1/2 lb | sharp cheddar cheese, grated | 225 g |
| 3 tbsp | minced fresh parsley | 45 mL |
Directions
Preheat oven to 350°F/180°C.
Grease a 7-X 11-in/18-X28-cm baking dish.
Drain and discard juice from 1 jar of artichokes.
Drain liquid from the other jar into fry pan. Add onion and garlic and sauté.
Chop artichokes into quarters.
Combine eggs, crumbs, sat, pepper, oregano and tabasco. Stir in cheese and artichokes. Add onion mixture.
Pour mixture into the pan and spread evenly in a thin layer.
Bake for 30 minutes or until lightly set. Cool and cut in squares and serve.
