Cranberry-Applesauce Loaf

Ingredients

2 cups all purpose flour 475 mL
3/4 cup sugar 175 mL
1-1/2 tsp baking powder 7 mL
1 tsp salt 5 mL
1/2 tsp baking soda 2 mL
1 cup cranberries, coarsely chopped 250 mL
1/2 cup walnuts, chopped 125 mL
1 egg, beaten 1
1-1/2 cups applesauce 350 mL
2 tbsp salad oil 30 mL

Directions

Sift together flour, sugar, baking powder, salt and baking soda.

Stir in cranberries and chopped walnuts.

Combine the egg, applesauce and salad oil, and then add to dry ingredients, stirring just until moistened.

Bake in greased loaf pan (9-X5-X3-in/23-X13-X8-cm) at 350°F/180°C for 50 minutes.
