Ingredients
| Base | ||
| 1 1/2 cups | flour | 150 g |
| 6 tbsp | sugar | 75 g |
| 3/4 cup | butter | 150 g |
| Topping | ||
| 4 | eggs, lightly beaten | 4 |
| 1/3 cup | lemon juice | 75 mL |
| 1 1/4 cups | sugar | 250 g |
| 1/3 cup | flour | 40 g |
| 1 tsp | baking powder | 5 mL |
Directions
Preheat oven to 350°F/180°C.
Mix flour, sugar, and butter thoroughly and press into a 9 x 13-in (23 x 33-cm) pan.
Bake for 18 to 20 minutes until light golden.
Mix together eggs, lemon juice, sugar, flour, and baking powder. Pour over crust.
Bake an additional 20 to 25 minutes. Topping should be barely firm to the touch. Do not overcook.
