Ingredients
| 2 lb | fresh asparagus | 1 kg |
| 4 tbsp | butter | 60 g |
| 2 tsp | lemon juice | 10 mL |
| 1/4 tsp | marjoram leaves | 1 mL |
| 1/4 cup | salted cashews, coarsely chopped | 40 g |
Directions
Prepare asparagus. Snap or cut off tough ends. If desired, peel stalks to remove scales. Rinse well.
In a wide frying pan, bring 1 in/2.5 cm water to a boil over high heat, then add asparagus. Cook for about 7 minutes.
In a small pan, melt butter over low heat. Add lemon juice, marjoram, and cashews and simmer for 2 minutes.
Pour cashew butter over hot, drained asparagus.
