Asparagus with Cashew Butter

Ingredients

2 lb fresh asparagus 1 kg
4 tbsp butter 60 g
2 tsp lemon juice 10 mL
1/4 tsp marjoram leaves 1 mL
1/4 cup salted cashews, coarsely chopped 40 g

Directions

Prepare asparagus. Snap or cut off tough ends. If desired, peel stalks to remove scales. Rinse well.

In a wide frying pan, bring 1 in/2.5 cm water to a boil over high heat, then add asparagus. Cook for about 7 minutes.

In a small pan, melt butter over low heat. Add lemon juice, marjoram, and cashews and simmer for 2 minutes.

Pour cashew butter over hot, drained asparagus.
